Chamomile Poached Salmon with Yogurt Dill Sauce

Poaching Liquid

  • 2 cups water
  • 4 chamomile tea bags
  • 1 sprig fresh dill
  • 1 sprig fresh parsley
  • 2 green onion tops
  • 1 tsp whole peppercorns
  • Salt, to taste
  • 3 tbsp butter

Yogurt Dill Sauce

  • 1 cup plain Greek yogurt
  • 1 tbsp fresh dill, finely chopped
  • Juice of 2 lemons
  • 2 tbsp olive oil
  • Salt, to taste

Instructions

Prepare the Poaching Liquid

  1. In a medium saucepan, combine water, chamomile tea bags, dill, parsley, green onion tops, peppercorns, and a pinch of salt.
  2. Bring to a boil over medium-high heat.
  3. Reduce to a very gentle simmer and remove tea bags after 5 minutes.
  4. Stir in the butter.

Make the Yogurt Dill Sauce

  1. In a bowl, whisk together yogurt, chopped dill, lemon juice, and olive oil.
  2. Season with salt to taste.
  3. Chill until ready to serve.

Poach the Salmon

  1. Lightly season salmon portions with salt.
  2. Gently place salmon into the poaching liquid.
  3. Simmer gently for 8–10 minutes, or until the salmon is just cooked through and flakes easily.
  4. Carefully remove salmon and set aside to rest.
  5. Plate the poached salmon with a generous spoonful of yogurt dill sauce.
