Sockeye Salmon Melt

This salmon melt is a fun take on a classic sandwich. Using smoked salmon cuts down on cooking time, so this meal can come together in just minutes and leave you full and happy! The combination of salmon, cheese, pickles and a crispy piece of bread will cause yummy noises with each bite! This is the perfect recipe to spice up lunches or make a quick dinner.

Ingredients

  • 12 oz Smoked or cooked salmon (about 2 portions)
  • 1 Tomato, sliced
  • 1 Shallot, minced
  • 4 Celery Stalks, minced
  • Pickle Slices
  • 2 Tbs Mayonnaise
  • 1 Lemon Zest
  • 1 Tsp Hot Sauce
  • 1 Slice Cheddar Cheese
  • Salt and Pepper, to taste
  • 2 Tbs Butter

Instructions

For the Salmon Salad

  1. Mince shallot and celery and add to a medium mixing bowl.
  2. Add salmon, zest of one lemon, hot sauce and mayonnaise, mix well.

For Sandwich

  1. Butter one side of bread and place in pan, butter side down on pan.
  2. On the bead layer your sandwich: pickles- cheddar- salmon mixture- cheddar and  butter bread, butter side up.
  3. Cook on medium low heat for about four minutes.
  4. Flip over, cover and turn heat to low and cook for another 4 minutes. The bread should she golden brown on each side and cheese should be melty goodness on the inside.
  5. Take out of pan and cool it for a minutes and slice in half.
  6. Enjoy!
