The tangy-sweet cranberry sauce, infused with warm spices and zesty orange, perfectly complements the rich, flaky salmon baked on a bed of citrus. Orange Cranberry Sauce

  • 1 bag of cranberries (12 ounces)
  • ⅔ cup fresh squeezed orange juice (about 2 oranges)
  • 1 tsp clove
  • 1 tsp cinnamon
  • ⅓ cup dark brown sugar
  • ⅔ cup cane sugar

Sockeye Salmon

Instructions

Orange Cranberry Sauce

  1. Zest one orange and reserve for the end
  2. Juice both oranges
  3. In a medium size pot bring- both sugars, orange juice, clove, and cinnamon to a boil
  4. Place 10 ounces of the cranberries in the pot
  5. Let the cranberries simmer for 15 minutes
  6. Add in the remaining 2 ounces of cranberries
  7. Simmer for an additional 5 minutes
  8. Remove from heat and add in orange zet
  9. As the cranberry sauce cools it will thicken

Sockeye Salmon

  1. Preheat oven to 400
  2. Thinly slice the orange and lemon
  3. On a sheet tray arrange the lemon and orange slices for the salmon to lay on
  4. Salt, pepper, and drizzle olive oil on
  5. Bake at 400 for 20 minutes
  6. Serve salmon with the cranberry sauce and citrus

Notes

You can make the orange cranberry sauce ahead of time and store in the fridge for up to 10 days.
