Ingredients

  • 6 oz Smoked Salmon
  • 6 Eggs
  • ½ Cup Milk
  • Small Leafy Green, julienned
  • Orange Peppers, diced small
  • Shallot, minced
  • Parsley, chopped
  • 2 Tsp Mustard
  • Salt and Pepper, to taste

Instructions

  1. Preheat oven to 375.
  2. Chop julienne and mince the parsley, kale and shallot.
  3. In a large mixing bowl add eggs, milk, mustard and salt and pepper and whisk well.
  4. In a medium pan that is oven safe, sauté shallot and pepper.
  5. When soft add egg mixture, sprinkle julienned greens and salmon in.
  6. Move the pan to the oven for 18-20 minutes. The sides should be slightly brown and the egg mixture should set.
  7. Enjoy!
