For Fish

  • 1 ½ Lb Sockeye Salmon Fillet
  • 4 oz Pistachios, rough chopped
  • 1 Bunch Fresh Thyme
  • 1 Lemon
  • 1 Orange
  • 2 Tbs Mayonnaise
  • 1 Cup Fresh Pomegranate
  • Salt and Pepper

For Pomegranate Glaze

  • 2 Cups Pomegranate Juice
  • 1 Cup Balsamic Vinegar
  • ½ Cup Sugar

Instructions

For Pomegranate Glaze

  1. Combine all ingredients in a small sauce pot and bring to boil
  2. Reduce down ¾ of the way until bubbly and thickened
  3. Let cool to room temperature

For Fish

  1. Preheat oven to 425
  2. Rough chop pistachios
  3. Slice oranges and lemons into rounds
  4. Pull leaves off the steams of the thyme
  5. On a parchment lined sheet tray place salmon
  6. Season with salt and pepper
  7. Spread 2 tablespoons of mayonnaise on the fillet
  8. Sprinkle the chopped pistachios on the mayonnaise coated fillet and sprinkle with fresh thyme
  9. Place the orange and lemon slices around the fillet
  10. Cook for 10-12 minutes
  11.  Remove from oven and gently place on serving platter, sprinkle with the fresh pomegranate seeds and drizzle on glaze
  12. Enjoy!
